Raspberry Buttermilk Cake

Ingredients:

1 c flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup butter
2/3 c sugar + 1 1/2 Tbs sugar
1/2 tsp vanilla
1 egg
1/2 c buttermilk
1 c raspberries

Preheat oven to 400 degrees.  Butter and flour 9 in round cake pan.  Whisk together 4 dry ingredients.  In a separate bowl, beat butter and sugar till pale and fluffy (about 2 minutes).  Beat in vanilla and egg.  On low speed, slowly alternate adding buttermilk and wet ingredients to dry ingredients, until just combined.  Spoon into pan, smoothing top. Scatter raspberries on top and sprinkle with sugar.  Bake 25-30 min until golden brown.  Cool 10 min.

Apple Streusel Cake (Apfel Streuselkuchen)

Serves 12

Ingredients:
5 large apples
2 Tbs lemon juice
3 c flour
1/2  c sugar
1 c butter
2 eggs
1/2 tsp vanilla
1 pkg cream cheese, softened
1/4 c sugar
2 Tbs cream of wheat

Wash, peel and slice apples.  Place in steamer.  Drizzle with lemon juice and steam 3 minutes.  Combine 3 c flour and 1/2 c sugar.  Melt butter and pour into flour sugar mixture and mix.  Press half into a 9x13 baking dish.

Separate eggs.  Beat egg whites till stiff.  Add vanilla.  Set aside.
In another bowl, mix cream cheese, egg yolk, 1/4 c sugar and cream of wheat.  Beat till smooth.  Fold in egg whites.

Spread apples into pan over crust.  Spread egg mixture over apples.  Sprinkle remaining crust crumbs over top.  Bake at 350 degrees for 50-55 minutes.

Easy Homemade Apple Fritters

Ingredients:
1 c flour
1/4 c sugar
3/4 tsp salt
1 1/2 tsp bkg powder
1 tsp cinnamon
1/3 c milk
1 egg
1 c chopped apple

Glaze: mix
2 c powdered sugar
1 1/2 Tbs milk

Combine first 5 (dry) ingredients.  Stir in milk and egg until just combined.  Fold in apple.  Pour oil into skilled approx. 3/4 in deep.  Heat oil on high.  Oil is ready when a little dough thrown in floats to the top.  Carefully add dough to oil in heaping teaspoons.  Cook until brown, about 2 minutes, then flip.  Cook 1-2 minutes on second side until brown.  Transfer to paper towl and dab excess oil, then set on cooling rack.  Drizzle with glaze.  Best served warm.

Asparagus Soup

Ingredients:

1 bunch apsparagus
2 liter water
3 tsp salt
3 Tbs sugar
1/4 c butter
3 Tbs flour
1/2 c cream

Cut tips from asparagus and set aside.  Place stalks in a stockpot.  Add 2 liters of water, salt and sugar.  Lightly boil for 1 hour.  Remove asparagus stalks and discard.  In a small pot, melt butter with flour to make a roux.  Add to liquid and mix until smooth.  Add salt, pepper and sugar as needed to taste.  Add cream and sliced asparagus tips.  Cook 10-15 min.

German Orange Salad

Salad Dressing:
Juice from 2 oranges
1 tsp yellow mustard
3 T balsamic vinegar
2 T olive oil
pepper
1 tsp salt
3-4 T Agave syrup or honey

Mix salad greens, diced red onions, chopped parsley, and 2 oranges (peeled and chopped).

Drizzle dressing over salad just before serving.
