Ingredients:
5 large apples
2 Tbs lemon juice
3 c flour
1/2 c sugar
1 c butter
2 eggs
1/2 tsp vanilla
1 pkg cream cheese, softened
1/4 c sugar
2 Tbs cream of wheat
Wash, peel and slice apples. Place in steamer. Drizzle with lemon juice and steam 3 minutes. Combine 3 c flour and 1/2 c sugar. Melt butter and pour into flour sugar mixture and mix. Press half into a 9x13 baking dish.
Separate eggs. Beat egg whites till stiff. Add vanilla. Set aside.
In another bowl, mix cream cheese, egg yolk, 1/4 c sugar and cream of wheat. Beat till smooth. Fold in egg whites.
Spread apples into pan over crust. Spread egg mixture over apples. Sprinkle remaining crust crumbs over top. Bake at 350 degrees for 50-55 minutes.

Easy Homemade Apple Fritters
Ingredients:
1 c flour
1/4 c sugar
3/4 tsp salt
1 1/2 tsp bkg powder
1 tsp cinnamon
1/3 c milk
1 egg
1 c chopped apple
Glaze: mix
2 c powdered sugar
1 1/2 Tbs milk
Combine first 5 (dry) ingredients. Stir in milk and egg until just combined. Fold in apple. Pour oil into skilled approx. 3/4 in deep. Heat oil on high. Oil is ready when a little dough thrown in floats to the top. Carefully add dough to oil in heaping teaspoons. Cook until brown, about 2 minutes, then flip. Cook 1-2 minutes on second side until brown. Transfer to paper towl and dab excess oil, then set on cooling rack. Drizzle with glaze. Best served warm.

Fresh Beet Carrot Apple Salad

Ingredients:

1 lb of fresh beets
2 large carrots
2 granny smith apples
1 turnip
1 bunch fresh parsley (chopped) I only used about 1/2 of the bunch)
1/2 cup extra virgin olive oil
2 Tbsp sherry vinegar (I used red wine vinegar)
1 large orange
1 lime
salt and pepper to taste

Using a food processor, cut the following into a bowl (matchstick)
First the beets, then the carrots, then the apples and lastly the turnip - you can cover and leave til the next day if needed.
Dressing - use the zest of the lime and the orange and the juice of both also. Add the olive oil and the vinegar.
When ready to serve, pour the dressing over the beet, carrot, apple, turnip mixture and stir - stir in the chopped fresh parsley.
